Ingredients
- 4 cups fresh watermelon cubed & seeds removed
- 3 medium red tomatoes
- 1 small cucumber peeled and diced
- 3 large scallions white and green
- 1/2 cup yellow bell pepper seeded & chopped
- 1/4 cup lime juice (about three limes)
- 1/4 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
- 1/4 cup cilantro chopped
In a blender, combine ingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least FOUR hours. Garnish with basil, parsley, or cilantro as desired.
You can serve 3/4 cup as an appetizer
