Watermelon Gazpacho
a refreshing chilled low calorie soup

Ingredients
  • 4 cups fresh watermelon cubed & seeds removed
  • 3 medium red tomatoes
  • 1 small cucumber peeled and diced
  • 3 large scallions white and green
  • 1/2 cup yellow bell pepper seeded & chopped
  • 1/4 cup lime juice (about three limes)
  • 1/4 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup cilantro chopped
Directions
In a blender, combine ingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least FOUR hours. Garnish with basil, parsley, or cilantro as desired.

You can serve 3/4 cup as an appetizer
